Let's be honest: a mediocre sauce can ruin a perfect dumpling. Too often they're one-note—just salty, or bland, or all heat with no flavor. A truly great dipping sauce needs balance, and this is the recipe that nails it every single time.

This is our house-special, the go-to sauce we use on everything. It’s a perfect harmony of savory soy sauce, tangy Chinese black vinegar, a hint of sweetness, and the real star: our TIN MAN Sichuan Chili Crisp. It brings the magic with its deep umami, smoky heat, and that signature tingly feeling that makes everything it touches come alive. It takes two minutes to whisk together and will instantly elevate your meal from good to unforgettable.

Makes about ¾ cup

Ingredients

  • ¼ cup soy sauce

  • ¼ cup Chinese black vinegar

  • 3 Tbsp TIN MAN Sichuan Chili Crisp

  • 2 scallions, finely sliced

  • 1 Tbsp toasted sesame seeds

  • 1 tsp sugar

  • Optional: 1 tsp grated fresh ginger, finely chopped cilantro, or a drizzle of honey

Prep

  1. Prepare your ingredients. Finely slice the scallions (both white and green parts). If you're using them, grate the ginger and chop the cilantro.

  2. Combine and serve. In a small bowl, whisk together the soy sauce, black vinegar, Sichuan Chili Crisp, scallions, sesame seeds, sugar, and any optional add-ins. Stir well until the sugar is dissolved. That's it. Serve alongside fresh dumplings, noodles, or scallion pancakes.

TIN TIP

Double the batch and keep it in a sealed jar in the fridge for up to two weeks. It’s an instant flavor upgrade for everything from cold tofu and rice bowls to roasted broccoli and grilled meats.
